The demands brought on by the media as well as the fact that the worlds most attractive women (long, thin, and flawless) are placed on the worlds most prominent magazine covers puts a huge strain on women as a societal expectation; The message that this is saying is you have to look a certain way in order to be loved and admired.
I am here to tell you 'not to believe it!' Not even for a second..... Know that today's sexy is being one with Christianity, being smart, educated, independent, and lastly, a survivor. Know that the only thing that could cause you to shine is your self-respect and the love in your HEaRt that you allow to shine through. The more you exhibit kindness and compassion, the more you will earn admiration and adoration by the people who YOU really want to notice YOU!
In the words of Jane Fonda, "You don't have to strive to be perfect" just [strive to be] whole!
What I found truly amazing about her documentary was this--when Jane was just a young girl--around sixteen years old--her mother committed suicide.... Her father was tough...... so she turned to one of the most successful women of all time....Her name was Gretta Garbo. As Jane would watch the beautiful French Athlete prepare to dive from the rocks, she noticed something.......This stellar, strong, independent, intelligent woman whose form was far from the weak and skinny models of their time, was absolutely beautiful.
Gretta Garbo was unlike any woman she'd ever met--even til this day. Ms. Garbo had the appearance of a HEALTHY, WHOLESOME, AND STRONG body.....That's when Jane realized this is the type of woman she wished to be.
As this scrawny little girl with wrinkled clothing and nappy hair looked up at
Ms. Gretta, The goddess of them all turned to her and said these kind words:
'Would you like to come swimming with me?'
Little Miss Jane was in shock and inspired at the same time! That is ALL IT TOOK to make someone -- that being Jane -- feel special and loved! You see, this is what I've been saying all along...... 'One good deed' Makes the day, (the life), of one individual. You will inevitably find happiness; in fact, happiness will find you!

With these women in mind I prepared a lovely dinner, lightly seasoned yet delectable... All but one half an hour to prepare---
If you're a soup lover try this version of 'escarole and bean' Soup. It is one of my Italian favorites. As one would imagine, I wanted to make a quick pot of soup, except I had no escarole, a green leafy vegetable. So this is what I did---instead of throwing away the ends of my romaine lettuce I decided to try using for my soup! Just think, you never have to throw away the ends of your romaine lettuce again!
*Cut the ends of your romaine, place in a bowl of water, then drain in a colander.
*In a 16 quart cooking pot, place olive oil, garlic cloves,
salt & pepper to your liking, and saute your garlic until slightly golden. Once done---Add water in the same pot as your garlic to about 3 quarters full.
*Add romaine then salt and pepper to your liking.
*Lastly, add (1) 16 oz container or bag of mixed beans.
*I like having a variety such as lentil, kidney, navy, and chick pea, that I pick up at the local
farm. Nonetheless, the bean of choice for escarole soup is the navy bean.
This dish is so inexpensive and yet is one of the healthiest for your palate to enjoy!
Salad-- Take remainder of romaine, cut into wedges, squeeze half a lemon, sprinkle oil (preferably canola or extra virgin; 2 tbsps) then season with garlic salt and oregano.
Main Course--
3 Cod Fillets, 2 lemons, garlic, parsley, salt, pepper, and extra virgin olive oil or canola.
Rinse your fillets and place in a baking dish. Squeeze 1 1/2 Lemons over the fillets, then cut thin slices out of the remainder of the lemon. Place thin slices of lemon over the fillets. Sprinkle olive or canola oil over the fillets about 1 tbsp each piece. Next, sprinkle garlic salt, pepper and parsley (preferably fresh) over the fillets. Place in the oven on 350 degrees for about 45 minutes.
I placed baby carrots around the dish, lightly seasoned with salt and cinnamon. Lightly drizzle olive oil over carrots as well.
For dessert, I served raspberry's with vanilla ice cream in a small dessert bowl.
